Mexican Style Pizza Recipe
Step aside, Taco Tuesday … it’s Mexican pizza night!
If you’re looking for a low-carb Mexican-style pizza recipe, you’ve come to the right place!
This pizza features Outer Aisle’s jalapeño cauliflower crust, 3-cheese Mexican blend, fresh bell peppers and onions, grilled chicken and a few of your favorite Mexican toppings (salsa and sour cream, anyone?).
My favorite part is that this Mexican-style pizza recipe is simple to make and you can have dinner on the table in about 20 minutes. Pair it with a side of seasoned cauliflower rice, and you’ve got one low-carb, healthy dinner!
Pro Tip: Substitute sour cream for plain Greek yogurt. You might not even be able to tell the difference and you’ll get more protein and less fat!
Ingredients (Makes 2 Servings):
2 Chicken Breasts
3-Cheese Mexican Blend
1/2 Red, Green & Yellow Bell Peppers
1/4 Red Onion
4 Tablespoons Salsa (your favorite kind, we used Mild)
4 Tablespoons Plain Greek Yogurt (or sour cream - your choice!)
Cilantro garnish
Avocado Oil Spray
Seasonings to taste (salt, pepper, garlic powder)
Directions:
Preheat oven to 425 degrees
Place Outer Aisle pizza crusts on baking sheet, spray both lightly with avocado oil
Layer each round with cheese to your liking
Slice bell peppers and onion into thin strips
Season chicken to your liking (we used salt, pepper and garlic powder)
In small saucepan, saute bell peppers and onions with a little avocado oil spray
While veggies are cooking, grill chicken breast - on the stove or barbecue
Place pizza rounds In the oven for 5 minutes
Once the chicken is grilled, remove from stove/barbecue and cut into thin slices
Remove pizza rounds and place peppers, onion and grilled chicken on top
Bake for another 2-3 minutes
Remove pizza and dollop salsa and yogurt on top!
Garnish with cilantro
Enjoy your Mexican-style pizza!
I love placing the salsa and “sour cream” aka yogurt on top because heating up salsa just doesn’t seem right. But you could make it a sauce and put it below the cheese if you so desire.
