If you’re looking for a healthy pizza option, this Greek pizza recipe hits the spot. Made with a handful of simple ingredients (vegetables are key!) and a little bit of olive oil as the base, this healthy recipe will delight your taste buds without sabotaging your weight loss (or healthy eating) goals.
(And yes, you can eat pizza and still lose weight, for those of you who are wondering.)
I’ve been obsessed with making mini pizzas lately. So much so that I’ve made three this week, eek! But I don't feel the slightest bit bad about it because most of these mini pizzas have been made with super healthy ingredients!
One of the best parts about making mini pizzas is that the portion size is already predetermined, so you don’t have to worry about overdoing it. Load your pizza up with nutritious vegetables and you've got yourself a decent healthy meal. This Greek pizza also features Feta cheese, which is relatively lower in calories and fat compared to other cheeses. And to go along with the Meditteranean vibe, we used a bit of olive oil for the base which is rich in monounsaturated fat (the healthy kind) and antioxidant properties.
Tonight we made a healthy Greek pizza recipe, and I am delighted to say it tasted light and indulgent at the same time. The best part is that you only need a handful of ingredients, and most of them you can easily find at the grocery store.
Here’s how to make these mini Greek pizzas. Enjoy!
Ingredients:
Makes 2 servings
2 mini pizza crusts (I used Kontos pizza parlor crust from Sprouts Farmers Market)
2 teaspoons of extra virgin olive oil
2 teaspoons of sliced kalamata olives
1 teaspoon of minced garlic
Crumbled feta cheese
Sliced roasted red bell peppers (I used a can I found at Sprouts Farmers Market)
Sliced grape tomatoes
Diced red onion
Basil
Cooking Instructions:
Preheat oven to 425 degrees Fahrenheit
Drizzle 1 teaspoon of olive oil on each pizza crust, evenly spread around crust (I used a paper towel)
Sprinkle minced garlic on each round
Layer sliced red bell pepper, sliced tomatoes and onion on crusts
Sprinkle crumbled Feta cheese on top
Top with Kamata olives, a few more tomatoes and basil
Bake for 10 minutes
