Easy Zucchini Pizza Boat Recipe

What’s cheesy, saucy and has everything you love about pizza, minus the bread? Zucchini pizza boats! You might be thinking — but bread is half the point of pizza! But hear me out, if you’re looking for a little bit of a healthier option, but still craving a cheesy delight, you’ll want to give this zucchini boat pizza recipe a try. Keto peeps — you’ll be happy to know this is a great low-carb option for you!
I used Cooking Classy’s recipe and added a few twists. Enjoy!
Makes 3 servings
Ingredients:
3 zucchinis
Tinfoil
1 cup mozzarella cheese
1/4 cup shaved parmesan cheese
1 cup marinara sauce
1 package of pepperoni (optional)
1 tablespoon minced garlic (I usually have a jar from Sprouts on hand)
Olive oil spray or 2 tablespoons olive oil
Italian seasoning
Salt and pepper to taste
Instructions:
Preheat oven to 400 degrees
Line baking sheet with tinfoil
Cut each zucchini in half
Lay cut zucchinis down on baking tray (if they are falling to one side, you can slice the back of them to stabilize)
Brush or spray zucchinis with olive oil
Season boats with Italian seasoning, salt, pepper and minced garlic
Put marinara sauce on top of each boat
Layer mozzarella cheese on top
Sprinkle shaved parmesan on top
Slice pepperoni in half, put on top
Bake for 15-20 minutes, depending on the thickness of your zucchinis
Add any additional seasonings if you prefer (I sprinkle a little more Italian seasoning on top)
